I get asked this questions A LOT!
"How do you cook your potatoes?"
"How do your potatoes look so good?"
"How long do you cook your potatoes?"
I would say that my potatoes are roasted, as well as baked. here is a two step process to how I make my potatoes to save time. Being a college student and all. I have the answer to ALL these questions.
So here is my Roasted&Baked Potatoes recipe.

Ingredients:
-1-3 Potatoes of your choice. My favorites are Yukon, Russet, and White.
- (Optional) Seasonings of your choice. I like my potatoes without seasonings for the most part because I just really, REALLY love potatoes. But if you'd like you can add seasonings that you like. I sometimes use onion powder, Mince garlic, salt, and pepper, and vegan butter from time to time.
Steps:
1) Take your washed potatoes, and cut them in half, then cut the halves in half, until you have four fries per one potato.
2) Spray a pan with coconut, olive, or oil of your choice, and place them on it (potato skin up, potato face down).
3) Turn on your stove all the way up on HIGH heat to make the outside crispy. Cook until golden brown. It usually takes my stove 3-4 minutes for each side of the potatoes to brown.
4) This is where you can add the seasonings of your choice. In a microwave safe bowl, pour your potatoes and seasonings inside. Mix until you have your flavors all mixed in with your potato wedges.
5) Place your potatoes in the microwave, cook on HIGH for around 4 minutes and 30 seconds. This will make your potato wedges soft on the inside, while keeping the outside a bit crispy, just like a fry! It depends on how many watts your microwave has, so just keep an eye on them, and make sure they don't turn to mush, which I highly doubt will happen anyways.
6) Allow your potatoes to cool for around 2-3 minutes before serving and eating because you may burn your mouth. These are SO good and so tempting to eat right away, but it's better to be safe than sorry.
